Since 1997, we have established an unique bond with local vendors. We have suppliers of sun dried red chillies, from Pirna, North Goa and Canacona , South Goa. Tamarind and Kokum come from harvested trees, once a year.

Palm vinegar prepared by fermenting toddy, is from Goa Velha, and goes into the preparation of Red Vindaloo and Sorpotel Masala.

Toddy tappers who belong to a small and vanishing minority, with very few remaining in this traditional trade, bring in sap from coconut trees which they harvest by the rising sun, straight to our kitchen.

Dried fish which is an important ingredient in one of our delicacies comes from Harmal, North Goa. All our staple ingredients are meticulously ordered well ahead of time as they need to be at hand in preparing our legendary Goan delicacies.


Suna Nayak joined Mum’s Kitchen after being widowed. She had to take care of her two growing children. She works in our kitchen stewarding area and handles the mechanised dishwasher. She is trained to test the dishwasher which might sometimes fail the litmus check of cutlery and crockery sanitised at 80 degree. This test is done for quality assurance, in case of standards deviation. She too, is multi- skilled and handles our in-house laundry. Thanks to Sona. That’s what we call her today. She provides us with fresh laundered uniforms every day. By her example it is our hope that other mothers who are constrained to be the sole earners of their families can learn about perseverance and resilience and the balance between family and work. Her work speaks to others like her not to lose hope, focus on work and eventually reap the benefits of one’s efforts.
